Burmese Egg Curry Recipe

A delicious and aromatic vegetarian dish with hard-boiled eggs cooked in a tomato/onion based sauce with a touch of tamarind 😋


Ingredients:


- 4-5 Hard Boiled Eggs

- 1 White Onion

- 3 Tomatoes

- 4-5 cloves Garlic

- 1/3 tsp Turmeric powder

- 1/2 tsp Salt & Pepper

- 1 tsp Red Chili Powder

- 2 tsp Paprika

- Cooking Oil (1/3 cup)

- 4-5 tsp Tamarind paste/powder

- Cilantro


Preparations:

  • Finely chop the white onion and the garlic

  • Chop EACH tomato into about 8-10 pieces

Instructions:


1. Put your choice of cooking oil into a medium saucepan over medium heat. When the oil starts to heat up, add the turmeric powder.


2. After about 15 secs, add the chopped onions and garlic into the pan until it's golden brown.


3. Add paprika, red chili powder powder, salt, peppers and mix it well saute for 2 mins.


4. Add the tomatoes. Let it cook for 8-10 mins until the tomatoes starts to dissolve and the oil reaches the surface of the pan.

5. Add the hard boiled egg ,tamarind paste/powder and saute it for 6-7 minutes.


6. Add 1 1/2 cups of water and stir well. Lower the heat, put a cover on the pan and let it cook for 10 mins.


7. Remove cover, add chopped cilantro, stir thoroughly and turn of the stove. It's ready to be served. :)
